Abstract: Purple sweet potato (Ipomoea batatas var Ayamurasaki) is one commodity&#xD;
new tuber crops in Indonesia. Several studies in Japan,these sweet potatoes are&#xD;
rich in nutritient and anthocyanin pigment is higher than other types. Research&#xD;
materials used are leather purple sweet potato where generally only as animal&#xD;
feed or fertilizer, but now used for natural food coloring. Generally solvent using&#xD;
an organic solvent ethanol, currently using non organic solvent that is water,&#xD;
because when compared with ethanol, excess use of water is a cheap, safe, easy&#xD;
handling, and infinite number, but therea are shortcomings, which under normal&#xD;
conditions during extraction of anthocyanins, effectiveness of low water that it&#xD;
needs further treatment, namely to increase the temperature during extraction, so&#xD;
need ti study the influence of proportion of solvent water with the material and&#xD;
stages of size reduction.&#xD;
Experimental design used is Completely Randomized Design with nine&#xD;
treatment so that later use Duncan test. Observed variables there are two types of&#xD;
chemical and physical observations. Chemical observation consist of analysis of&#xD;
anthocyanin content and antioxidant activity, while phsical observation is&#xD;
viscosity. Anthocyanin content using spectrophotometry method, antioxidant&#xD;
activity using DPPH method, and viscosity using viscometer brookfield V-T 30.&#xD;
Further research is developed with the financially calculation of small scale&#xD;
industry by counting BEP, NPV, PP, and HPP.&#xD;
Calculation results show proportion of solvent water with the material and&#xD;
stages of size reduction influence of real of extraction anthocyanin, and then&#xD;
production financially of Rp 1.300,00.</description>
